Those pineapple tarts have beautiful soft texture and remain moist inside. They are done with a yogurt based batter, which is a very versatile ingredient that can be used with any fruit as a tart or a cake. They are very easy and quick to make, so it is a perfect small afternoon treat;)
Ingredients
for 4 tarts:
115g of flour
1 tsp of baking powder
50g of sugar
120g of natural yogurt
1/2 tsp of vanilla extract
1 egg
25g of melted butter
4 pineapple slices (best are canned)
Methode
Heat up the oven to 180oC without fan.
In a bowl combine flour, baking powder and sugar.
In another bowl combine yogurt, vanilla extract, melted butter and an egg. Mix to get a uniform mixture.
Combine both - the wet and dry ingredients. Mix just to combine. Do not over mix the batter.
Pour the batter into small tarts forms. Place a slice of pineapple on top.
Bake for 20-25 minutes - until just a bit browned.
After taking out of the oven, let them cool down. Take out of the forms.
Serve with icing sugar on top.
