This quick and easy recipe for baked potatoes is a great option if you need a snack or a side dish for a barbecue. It also works really well as a part of a main dish, especially for roasted meat. Here is another example of how you can serve them (with my crispy skin duck):
Ingredients:
Potatoes
Salt & Pepper
Olive oil
Cheese
For the dip:
20g cream cheese
20g yogurt
Chopped chives
1 clove of garlic (optional)
Methode
Heat up the oven to 220o C.
Cut the potatoes in thin slices to the 3/4 of their thickness (so the bottom holds the slices together - check video if unsure). Place them on the baking tray. Sprinkle some salt and pepper on them and pour a bit of olive oil or some duck fat if you have it - potatoes will be even more crispy:)
Bake potatoes for 30-40 minutes depending on the size of the potatoes (check if they are ready with a fork).
When baked, take them out and you can put the thin slices of cheese in between slices of the potatoes and put back in the oven for 2-3 minutes until the cheese melts.
Prepare the dip. Combine cream cheese with yogurt, and some salt and pepper as well as the chives and pressed garlic and mix together.
Serve with the dip on the side or on top of the potatoes.
